Horseradish is traditionally used in Slavic cuisine and medicine. Considered a remedy to improve digestion and boost immunity.
Perennial herbaceous plant with strong roots and large leaves. Prefers moist, fertile soils.
Digging roots in early spring or autumn. Harvest leaves in spring and summer for fresh use.
Roots are best dug after first frosts for juicier and spicier flavor. Collect leaves in the morning when they are freshest.
Clean roots from soil and peel, then wash thoroughly. Store roots in cool, dark place or buried in sand.
Horseradish with garlic (Grating and mixing)
Spicy and aromatic sauce for meat and fish
1. Grate 200 g fresh horseradish finely.
2. Add 2-3 minced garlic cloves.
3. Pour in 2 tbsp vinegar and some salt, mix well.
4. Chill before serving.
Horseradish vodka tincture (Infusing)
Warming and tonic remedy
1. Cut 100 g peeled horseradish into small pieces.
2. Pour 500 ml vodka and infuse for 2 weeks in dark place.
3. Strain and take 20 ml before meals.
Horseradish leaf salad (Chopping and mixing)
Fresh, spicy salad with herbs
1. Finely chop 100 g fresh horseradish leaves.
2. Add parsley and dill.
3. Dress with vegetable oil and lemon juice to taste.
4. Serve fresh.
