Mahleb cherry is traditionally used in cooking and medicine in the Caucasus and Mediterranean regions. Seeds are used as mahaleb spice in baking.
Tree or large shrub with thorns. Fruits are black-purple, ripen in autumn.

Harvest fruits after full ripening in autumn. Use gloves to protect from thorns.
Fruits are usually dried or used to make tinctures and flavorings. Seeds are used as a spice (mahaleb).
Mahleb cherry jam (Cooking fruits with sugar)
Fragrant jam with a distinctive flavor
1. Wash fruits and remove seeds if needed.
2. Mix fruits with sugar in a 1:1 ratio.
3. Let sit for several hours to release juice.
4. Cook on low heat until thickened.
5. Pour into sterilized jars and seal.
Mahleb cherry tincture (Infusing fruits in alcohol)
Aromatic tincture with a spicy note
1. Place fruits in a glass jar.
2. Pour alcohol or vodka over them.
3. Infuse in a dark place for 3-4 weeks, shaking occasionally.
4. Strain and bottle.
